Beastly Eats African blogger makes classic milk tart

A classic milk tart is a South African dessert consisting of a sweet pastry crust containing a creamy filling.

Here’s an easy way to make the classic milk tart, you can do this with your eyes closed.



2 cups flour

2 tsp baking powder

pinch of salt

½ cup sugar

125g butter

1 egg



4 ½ cups milk

cinnamon stick

1 cup sugar

3 eggs

2 tbsp cornflour

2 flour

1 tsp vanilla essence

large tbsp butter


For the pastry:

  1. Preheat oven to 180°C
  2. Beat butter and sugar together
  3. Add one egg at a time, beating well after each addition
  4. Sift dry ingredients in a large bowl (cake flour, baking powder and salt)
  5. Add egg mixture to dry ingredients and mix thoroughly to form a stiff dough
  6. Press the dough evenly into a greased tart tin, make sure that it isn’t too thick and prick it all over with a fork
  7. Blind bake at 180°C for 30 min or until the pastry is golden

For the filling:

  1. Place milk and cinnamon stick into a pot
  2. Bring milk to a gentle boil. Discard cinnamon stick
  3. In a large bowl, whisk eggs well and add sugar, flour, cornflour and salt
  4. Pour the boiling milk into the egg mixture, whisking continuously
  5. Return milk mixture to the pot and stir for 10-12 minutes on medium heat until the mixture thickens
  6. Add butter and vanilla essence and mix through
  7. Pour milk mixture into baked pastry shell
  8. Allow tart to cool in the fridge
  9. Sprinkle with cinnamon
