Taste the love with this warm dish of eggs poached in a sauce of tomatoes, chilli peppers, and onions by one of our favourite South African food blogger Meals with Tumi.
What you’ll need for the shakshuka
1 red onion finely chopped
Handful baby spinach washed
1 green chili finely chopped
3 garlic cloves
2 tbs tomato purée
1 can of peeled and diced tomatoes
2 tbs brown sugar
3 eggs olive oil
Salt & ground black pepper
1/2 teaspoon of onion salt
- Heat up your stove on a medium heat, in a non-stick pan add your olive oil, your red onion, garlic cloves and fry till onion is tender but not burnt. Add your chili, turmeric and fry for a minute or two. Add your baby spinach and fry for another minute.
- Add your tomato purée, stir it all in the add your can of tomatoes, season with salt and pepper, add your brown sugar, and onion salt, simmer for 3 minutes.
- Add your eggs and simmer for another 2 minutes (you can cover your pan if you prefer your eggs well to over done). You can also add chorizo, bacon , sausage or any other meat your prefer.
