Shakshuka by meals with tumi

Taste the love with this warm dish of eggs poached in a sauce of tomatoes, chilli peppers, and onions by one of our favourite South African food blogger Meals with Tumi.

What you’ll need for the shakshuka

1 red onion finely chopped

Handful baby spinach washed

1 green chili finely chopped

3 garlic cloves

Turmeric

2 tbs tomato purée

1 can of peeled and diced tomatoes

2 tbs brown sugar

3 eggs olive oil

Salt & ground black pepper

1/2 teaspoon of onion salt

Method:

  1. Heat up your stove on a medium heat, in a non-stick pan add your olive oil, your red onion, garlic cloves and fry till onion is tender but not burnt. Add your chili, turmeric and fry for a minute or two. Add your baby spinach and fry for another minute.
  2. Add your tomato purée, stir it all in the add your can of tomatoes, season with salt and pepper, add your brown sugar, and onion salt, simmer for 3 minutes.
  3. Add your eggs and simmer for another 2 minutes (you can cover your pan if you prefer your eggs well to over done). You can also add chorizo, bacon , sausage or any other meat your prefer.
