Our favourite fried chicken spot invited us for The Colonel’s Kitchen Tour at KFC Lenasia South. This experience debunked all the myths we had about how KFC prepares our favourite meals.

Area code manager Daniel Motsoeneng, has worked at KFC South Africa for 12 years. He was happy and eager to show us around their kitchen and how their great tasting chicken is prepared.

KFC follows the best global hygiene and safety standards?

It’s always a pleasure when a brand reassures you that they make hygiene a top priority when working with food. We were not allowed to move to different stations before washing your hands.

Wash process:

  • Rinse your hands with water first,
  • Squeeze hand wash and rub your hands,
  • Rinse the soap off.
  • Dry your hands with the hand towels
  • Rub hand sanitiser.

NB – when you are done washing your hands, you need to make sure that you do not touch your clothes, fix your hair nets or touch your face.

The great tasting chicken

Each tray of chicken has timestamps with dates. If its not to the standard of KFC South Africa, it immediately gets sent back to the supplier.

Where does the chicken come from?,  “our chicken comes from Rainbow farms” Daniel said.

This is the station that changed my perspective about KFC South Africa and will enable me to be patient while waiting for my food, as I’ve seen the care that goes into preparing the fried chicken we all love. KFC strives for quality and it’s impossible to miss an error as each batch of fresh chicken starts with highly trained cooks inspecting each individual piece to make sure it is only the best. .

The breading station: The individual pieces are then hand breaded and rolled into KFC’s secret combination of 11 herbs and spices recipe ensuring a crisp golden finish and distinctive taste. This takes time and attention before deep frying the chicken to be held and served to customers.

Do not be alarmed. I had to wear gloves because I had nail polish on and its unhygienic to touch food with nail polish as it can chip and stay behind.

Remember we’ve seen TV commercials and artworks where the drumsticks covered in flour are hit against each other? YES thats very real, this is to ensure that there is no excess flour on any chicken.

The secret recipe

Well we tried guys, but this is one helluva best kept secret. Not even the employees know the secret spice! We really thought we would have left and announced the [BREAKING NEWS] that we finally got hold of the secret recipe but no one, not even you would want to share a family secret thats been in the family for years, then it wouldn’t be a secret… So we forgive them.

The heart of the kitchen

This is the place where they bring food to hungry tummies. Here, your order arrives on the screen, then each employee has a dedicated station they work at to prepare a specific meal and ensure that each meal that goes out to the public has passed all the quality control methods.

Fun fact: Thabisa Mkhwanazi, KFC Africa’s Public Affairs Director said “Each KFC cook goes through the brand’s nationally accredited training system which involves on the ground and theoretical training for a 3-month period for all team members. Chicken is cooked in high temperatures (180 degrees Fahrenheit) eradicating any germs.”
